Are Ghee & Clarified Butter the Same? If a product is only called “clarified butter” it is not the same high-quality as Ghee. Let’s look at the differences between butter, clarified butter, and Ghee. Butter is an emulsified mixture of fat and water. Clarified butter is butter that has been heated to cause excess water to evaporate and fat to separate into two parts – the good, buttery yellow fat and the white milk solids. Clarified butter contains mostly yellow fat. But, during the straining process, water and milk solids can stay included. Ghee, on the other hand, takes the clarification process further by heating the butter much longer until the solids brown and sink to the bottom of the pan. When the substance is strained, all that remains is Ghee clarified butter which has rich, buttery, nutty, and toasted flavor.
