Great Ways to Enjoy
- Sauté 2 Tbsp of chopped onion in 2 Tbsp of olive oil, add frozen sweet potatoes and cover. Turn with spatula to brown the mixture; season with salt to taste and serve immediately.
- Steam sweet potatoes for about 5 minutes. Place in blender and puree until smooth. Add 1/2 cup vegetable broth and blend until combined. Transfer to a pot. Add 1 1/2 cups broth, 1/2 cup milk and 3/4 tsp curry powder. Bring to a boil, lower and simmer for 15 minutes. Ladle into bowls and top with a dollop of yogurt.
- Wonderful roasted with rosemary as a side dish or served with a poached egg.
